docs: rewrite README to kepr renderer safe-subset (v0.3.7) The kepr.uk/peach-relay renderer is a minimal markdown engine that renders tables as run-on text, #### h4 as literal '<p>#### ...</p>', and strips blockquotes; bold/ordered/nested/html are unverified and treated as unsafe. Rewrite uses ONLY h1-h3, paragraphs, flat one-line dash bullets, *italic*, inline code, and fenced code. Encryption layers, setup picker, and config options are now bullet lists with italic/code lead-ins (no tables, no bold); nginx and Caddy are ### headings; the verify note is a plain paragraph. Local guards: 0 pipes, 0 html, 0 ---, 0 **, 0 ####, 0 ^>, 0 nested/ordered/links. Continuity updated with the permanent safe-subset rule + live-render check.
